Your dilemma is not all that different than mine was a number of years ago. The difference being grandchildren vs children.
First of all the overall image quality of a modern canon full frame is quite striking. Heck even the 5D Mark 2, 3, and 4 series was/is outstanding. Any of the R5 or R6 series will make you smile when you look at your little ones through either an STM or L lens. Will an L, or more specifically the RF50L1.2, make you smile more? Probably, but at a substantial cost.
To make a long story longer, I found that I use/used the EF100L2.8 for most of my grandchildren photos. While they were small I took images from a distance or close up. As they got older it was fast enough to keep up with their never stay still moments. And as they got older I ended up using it for portraits, sports, concerts, etc.. And…on an occasion I actually use it for a macro lens! It is an extremely diverse lens.
I have several L and non L lenses. To me it simply boils down to this …..
if you never drink expensive scotch you won’t/don’t miss it. If you ever try it, going back to inexpensive scotch is very difficult. If you get the R6ii and STM lenses you will most likely be very happy with the photos you take, but if you get the RF50L1.2 or a similar L lens you will get that “wow” factor that I just can’t explain, but you know it when you see it!
I don’t have a lot of money but I have never regretted a single L lens purchase, yet have regretted several non L lens purchases due to the good scotch bad scotch premise.
FYI… I have always been able to save a considerable amount of money by buying from the canon refurbished store during sale events. More specifically late fall into the holiday seasons and sometimes just the last couple days of the year.
