I’d say go for another R7. It seems to be your sweet spot.

I sure like the convenience of having multiple bodies all set up and ready to go too. For me, the R5 is the wildlife body (with 100-500 + 1.4x), the R7 shoots macros with the 100 (and you’re right, it does everything else darn well too), the R6 usually has the 24-105 (or a prime) on it, the R6ii is my workhorse (with 15-35, 28-70, 70-200), the M6 for low-res product shots for web, and the fun little M6ii (with a dozen M lenses) is my grab and go cam.

You have me thinking here R2.  Maybe put the 100-500 on the R5 and use the R7 for my other lenses 24-105, 70-200, 100-400 etc.  The R5 and the R7 with the 100-500 do equally well, probably because of the extra MP of the R5.  THEN, wait a little while and pick up the R8 as my third body.  I like the fact that it is smaller and lighter than the R5 and R7 and this would afford me several options rather than adding another R7.

I may trade the R7 for the R8 this spring (since the 100 goes to 1.4:1). The biggest thing I’d miss tho is the IBIS, but I usually have enough light for faster shutter speeds (LEDs or flash).

I read a lot about the R8 and I like its size and weight.  The IBIS I can do without especially since most of my lenses have stabilization built into them.  The sample photos I've seen from the R8 are quite nice.  I would really like the option to have a lighter setup to use when wanted.  I may sit tight for a while and this may be a definite possibility.

Me too!  Coming from Nikon it is fun to be with Canon now.  They are so far ahead of Nikon and they just keep on coming out with lots of gear and options for their users.  Biggest thing for me with Canon is their excellent auto focus system, great for bird photography.
