Being relatively new to Canon do these take place with all formats of shooting i.e. raw and all jpeg settings? e.g. Apparently the 16mm f2.8 RF needs a lot of distortion correction and I wouldn't want to mess around in pp with a load of raw files correcting it.

No it doesn't. But DPP4 automatically corrects the distortion too (it makes no difference if you switch that lens correction off, though you can switch off the Digital Lens Optimizer, the Diffraction correction, Color blur and Peripheral illumination and see differences).

My DxO PhotoLab is set up to automatically apply all lens corrections.
