I'm not much of an APS-C fan, but do remember that you are effectively increasing your magnification by a factor of 1.6.  That means any movement is going to be magnified.  Add to that the high pixel density of your camera and it gets even worse.  IBIS and IS can only do so much.  I'd imagine you're seeing what amounts to micro-motion blur in your photos.  My first suggestion is to be sure to shut off the engine while you shoot.  It may not seem like it, but the entire car is gently vibrating from the engine.  Make sure anyone in the car sits still, including you.  One a lower density sensor it may work fine, but you're getting blur between pixels.  The second is to up your shutter speed.  1/2000 is likely not enough without a solid base (tripod).  You also might want to use that window attachment if you can't get your shutter speed over 1/3200s (that's my sweet spot on the R5) .  I have also noticed that the higher density sensors sometimes fight a bit with the IS in older adapted lenses.  I used to have to turn it off with my R5 and 600 vII.  I shoot almost exclusively in electronic shutter and with the exception of a lower bit-depth on my R5 (and no exceptions on my R3) using mechanical shutter isn't going to make a difference here.
