You ask us if your R7 sucks shooting from the car? Or it is rather an information than a question? In that case why it sucks?
Why ??? The only difference I can think of, is that I shoot 100% mechanical with my R5, and 100% electronic shutter with the R7, but I don't see how this in itself should make such a huge difference ?
What difference? Why don't you demonstraze what you mean on couple of samples.
Am I overlooking something here ?

Oh and btw, I've even been in good light and had my shutter speed as high as 1/2000th, for perched birds ! And they were still blurry !? I don't get it.
It can be point No. 1) from your list above, or just atmospheric density, or shooting through the car windows, or....
With such a lack of factual information nothing can be determined clearly.
Your thoughts ?
