I think it less not giving it a chance and more you're trying to replicate your Canon in a camera which operates much differently. Instead of trying to make the X100 replicate your Canon, use it for how it excels as a compact walk around camera when your Canon is too large. Then again, you could just sell it while used values are still rather inflated and get a Canon EOS-M with the 22mm/f2 lens.

I've been using Canon gear for a good few years and find the interface quick, easy and intuitive allowing me to quickly change settings on the fly and produce nice looking clean images.

Once I got my hands on the X100F I was initially smitten as it feels so good in the hands. I have however found that it's so much more frustrating to use than the Canon. Even now months in I'm still frustrated trying to set up custom presets,

On the F the custom presets are primarily JPG image related, not mechanical or Raw. They are not used for things like setting single/burst, AF-S/C/M, AF Mode, tracking type, Auto ISO, etc.

and I find the way the ISO works on the camera bewildering with it's relationship to the DR settings beyond me.

DR200 and DR400 raise the base ISO so it can lighten shadows and darken highlights; use it in high contrast situations. If you don't want that just leave it at DR100.

Honestly, if you are more comfortable with PASM and control wheels then a Fuji with dedicated classic dials is not for you.
