I think 'lightning fast' is a bit of an overstatement. It's definitely slower than the stacked sensor in the X-H2s for example. But I agree in principle - it's not about being 'stacked' as such, it's just about getting readout speeds 'fast enough'. It seems that the ~15ms readout of the R5 sets the 'good enough' bar, which might be feasible without going to a stacked sensor.

I'm over the MP wars. I am fine with 20mp, and anything beyond is icing for me. I don't crop much, so there's that.

Well, if we're talking about a 'high end' APS-C body aimed at wildlife, I think the problem is that the pixel density has to be better than FF or there's no point - just use an R3/R5 in crop mode. 26MP might be sufficient, but I suspect 20MP isn't (I believe the R5 is 18MP in crop mode)

Well the 17mp's from my R5 might be enough if I needed to do little to no cropping. But even in that 17mp "crop mode" almost all of my bird shots still need at least a little cropping, sometimes more than a little.
