I'll speculate in 1 to 1.5 years the R7 MK2 will be out. I think Canon put out the R7 with less abled features to get the 1.6x crowd into mirrorless but will quickly upgrade it to the R7 MK2 in under 2 years.

This is going by what they have done in the past with DSLR that were feature and performance reduced. My Canon 300D Rebel comes to mind. First affordable camera to get people into DSLR at 1.6x. But was feature and performance reduced.

Sounds fast to me, but I hope your right, and I hope it adds a couple big improvements, without being a TON more expensive. As for price, again, I don't see a $3 or $4K crop body...

I do think the APS-C evolution will be interesting. The X-H2s definitely raised some eyebrows when it was announced at $2.5k, but now that it's been out for a while it seems to be seen as a fair-ish price for what you get (and that's without AF that is up to par with others for birds/wildlife). The OM-1 at $2.2k is accepted as a great wildlife camera.

I definitely think that a Canon R7-X that basically matched the X-H2s in raw specs but offered R3 AF (or better with a Digit XI) and say 50fps burst rates with a deep buffer would find lots of takers, and I think they could price it at $3k.
