Yes, if all you have to do is remove the IR-cut layer on top.  I would think that monochrome conversion would lose the dual-pixel AF, though, for live view and video, if they have to remove the microlenses to dissolve the CFA.  I would really like a monochrome version of that sensor.  Without microlenses, the narrower pixels in the horizontal direction may cause luminance losses at the left and right edges of the frame, too.  The 90D doesn't have dual-pixel raw, so you can't capitalize on the doubled horizontal resolution, as the readout will just give the full pixels combined.
