They don't really scream for a Mark II, they scream for a $4k professional body. Because adding those features would put the R7 firmly into that price bracket, like it or not.

So OM systems and Fuji can figure out how to offer it in the $2500 range but the best Canon could be able to do is $4000?

These cameras lack a lot of what the R7 offers. They lack for example a decent sensor, one is piddly small, the other a horrible x-trans malarkey. Let's see who survives. I have as much confidence in OM systems to make it as was warranted in Sono motors to deliver the Sion electric car...
