That little red “writing to card” light has been a feature of all Canon dSLRs and mirrorless since the dawn of time, and possibly other manufacturers too.  After a burst that fills the buffer it may flash for several seconds.  It’s there to tell you not to open the card or battery door.  As far as I know it can’t be turned off, and I quite understand that it could be annoying in certain situations. I think you might be right about using tape - try metal tape for opacity.
