With my R5, provided the camera is powered ON, the EVF functions instantly when I bring my eye up to it, however, you would have to set Auto Power to Disable to prevent Start-up delay, and that would also use up battery power, but likely, not as much as continuous EVF.

Of course, with an external power source, or adequate spare batteries not a problem either way.

One other thing to consider is the start-up time from sleep, when touching the shutter button to wake the camera. I’ve found this is quicker if you put the camera in flight mode, i.e. both Bluetooth and Wireless are turned off. With quicker wake-up and eye activation of the EVF, you may find you don’t need to set the camera/EVF to always active.
