I tried to replicate your test using the canon basic adapter (I don't have the ring adapter) and EF 24-105mm f/4 L on R7. I tried quite a few times and used a number of different settings (tracking on/off, eye detect on/off) but I did not observe any issues with IBIS. I zoomed in and out slowly but independent of the focal length, the image was quite stable. I did not observe any IBIS "judder" or erratic movement of image on the viewfinder. Since I don't sue the camera for video, I did not try any of these in video mode.

You won't have a problem with the basic adapter because that only loops through the electronic contacts from the RF mount to the EF mount without interfering with the communication between body and lens. The Viltrox Speedbooster adapter and control ring adapter do modify the control commands and responses and need to be updated to work with specific lenses and camera body combinations - and those updates have been pulled from their websites and were stopped by Canon threatening legal action outright just before the R7 was released.
