A little late to the party responding. I own both the R5 and the R7. I had the R5 first and loved learning how to shoot birds with it. I took a flyer on the R7 and it, for the most part, does a good job. I think it's AF system is a bit improved over the R5 for things such as BIF. My challenge is that I live where it is chronically overcast most of the year. When it is sunny, I'm able to capture good pictures with the R7 just like I did with the R5 but with additional reach. Where I see the big difference is on those overcast days. The R5 does a better job picking up the birds in lower light and there is also less noise. The other main difference as others have also mentioned is that the rolling shutter is worse on the R7.

As usual, your mileage may vary. If you will have better light, you can't go wrong with the R7 and good glass that you can afford due to the lower body cost. That being said, I'm going back to my R5 for birding during the low light winter months but will break out the R7 on sunny days and want more reach.

When I read your “weather report”, I made a bet with myself that we were neighbors. I didn’t lose.
