It's really a matter of preferences and acceptable compromise.

We went to Italy nine years ago. We visited my daughter who was there on a full year university academic program in Florence. She took an RX100 (first version). It was great for her and very convenient (as expected) due to its size.  I took and used aps-c mirror-less.  Much more convenient than my dslr kit.

I'm going to Europe again later this year and will be taking ff mirror-less (and will likely wish at times for the lighter, smaller aps-c system).  I will be taking a 28-200/2.8-5.6 and 17-28/2.8 zoom as opposed to just a mid-range.  She's going again on a trip, and I expect she'll take the RX100 if nothing happens to it between now and then.  I'm hoping her friend will not take his film kit.  so, both types of systems can be good choices.

In those 9 years, there have been system improvements with both camera types and the availability of noise reduction and other AI processing.  Which kind of reduces some of the impacts of the sensor size differences.

That said, many of the church and museum interiors, etc., are low light and neither tripods nor flash are usually allowed.  I would suggest deciding well before your trip if you can to get the opportunity to do testing in similar venues to confirm your choices.
