I went in 2019 using a Nikon D500. For lenses, 90% of the time I used a Sigma 18- 35mm f/1.8 and just a few times my Nikon 70- 200mm f/2.8. If I was to go back, I would be using my Fuji 16-55mm f/2.8 and the 50- 140 mm f/2.8. I like the flexibility of using faster zooms. It simplifies things too. I would probably also bring my Fuji 16mm f/1.4 for situations I wanted faster wide images. Gallery of images: https://pbase.com/jeffryz/japan&page=all
