Perhaps you are meaning the following scenario: Use the AF field in the center, focus via back Button and then re-compose. But the pitfalls of the old focus and re-compose technique performed with DSLRs would apply again: Deviations and potential misfocus due to re-compose, not taking into account filed curvature, etc. Continuous AF tracking will avoid exactly these pitfalls.

You probably don’t use BBF.  Yes you can do any of those things, it’s so flexible. Worth trying, you may find it’s a good solution for you.  And always in Servo mode, yet you have the benefits of single focus, continuous focus, tracking, or more if you set up dual BBF.  It takes a while to get used to it but then you may never go back. Of course it’s not for everyone.
