This is not about AF itself but a technique for recomposing without having to manually move the AF area / point. It is common on other systems, not so much in Canon land.

Sure it is. Both techniques that I am describing do not involve moving any AF point(s).

With “One Shot AF” you aim at your subject, half press to lock focus, then recompose. Shoot as many frames (and compositions) as you want want while maintaining a half press.

With Back Button Focus you aim at your subject, press and release the back “AF-On” (or * ) button, then shoot as many frames (and compositions) as you want. Maintaining a half press is not necessary.

When you let go of shutter half press the AF point jumps back to the original position and you can quickly select another subject.

The techniques I described entail the same (or less) effort. Can you not work this way?

In Canon land I would typically move the single point AF area via the touchscreen while looking through the viewfinder.

You don’t have to do this at all, although sometimes it’s preferable to reposition the AF point if your subject remains in that area of the viewfinder for several frames (saves camera motion).

This is not possible in Nikon Land (Z6/Z7).

But probably not necessary for your use cases either (shooting bushes, rocks, fences, houses, etc).

I’m thinking all you need to do is modify your technique a little.
