I am in the same boat as you, I have two sytems:
1.) R5 + 2.8 trinity plus 100-500 (awesome but huge)
2.) M6 mark II + 11-22, 16, 22, 32, 56 and 55-250 (amazing and portable)
This abandonment of EF-M is mostly just a temporary inconvenience in my opinion. Once they port over all of the EF-M designs to RF-S we will have the same system.
The RF mount fits on the M6 size, it will just look a bit funny.
You can compare the EF-M 15-45 to the RF-s 18-45. They are the same size/weight except that little hump for the bigger RF mount.

My plan:
Use the EF-M system until most of it exists in RF-s and then switch.
I expect this will happen in 2024-25. Till then I will happily use the M6m2.
There will be a big advantage also that I will be able to use my massive RF FF glass on the RF-s bodies if I ever need to.
For people who will be happy long term with the M6m2, you can expect a lot of great used gear in the next 5 years.
This pretty much sums it up for me too.
Except I'm just not sure if Canon's plans for crop R are to create a full-fledged system, or if it'll just remain a stepping stone to FF.
I suspect the latter, especially if there's to be no 3rd-party lens options. I hold out hope, but I'm also prepared to keep shooting my M6ii ad infinitum.

ps. I've tried the RF 15-35 f/2.8 on my crop R7, and yes it'd be wonderful as a (massive) kit lens.
