White EF L primes in the 500-800mm range will do fine as well.

EF 85mm f/1.8 has always been a staple. Yes it needs to be stopped down for max sharpness, but it does get Really sharp. It’s still fairly compact, and autofocus is very fast. Its twin brother the EF 100mm f/2 is also an option.
The EF-S 55-250 has been enjoyed by zillions of people. The STM is quite capable, and can even be turned into a birder with a “Rexley Special” TC.
I still own options 1, 3, and 4 above. For a 100mm I had the (much larger) EF 100mm f/2.8L Macro. A splendid lens. A person could even go for the venerable EF 135mm f/2 if they wanted a fast prime beyond 100mm (I have the biggie Sigma EF 135mm f/1.8 Art instead). There will be no shortage of used copies of the Canon with the recent release of the RF version!
These are all still very viable solutions for EF-M beyond 56mm.
