I have cameras with and without stabilisation. Telling the truth, I do not really notice difference. And I do make photographs also in dim conditions and without tripod.

Love the IBIS on my R6 and it makes a lot of difference on unstabilized primes. Have an RP and the 50mm 1.8 is so much more useable when taking very low light shots. Don't mind some weight, a bit of size or $$ penalty but would like to have IBIS moving forward!

- Are you happy with the focal length of the X100 (noting that it has the option of converter lenses if you like that sort of thing) or will you want lens options including zooms?
If you can answer most of those then you should have an answer.
All of them give great image quality, and they all handle pretty well. An X-E with the 27 is basically the same size and shape as an X100 so that doesn’t differentiate them. The X-Tx0 bodies are a similar size with a slight hump, and obviously a slightly different shape; personally I find the flat rangefinder style slips in and out of bags just slightly easier. Only the X100V is weather resistant, though in all honesty it doesn’t “feel” rugged so I’m not sure how much confidence it gives me.

Don't know how I missed the XT*00 having the PASM dials as well!
Interesting point about the left side viewfinder. I do wear glasses and would likely prefer a central mounted viewfinder.
#4 I am actually currently running with manual mode with auto ISO (and using the exposure comp instead) and prefer this to manually dialing in the ISO at the moment unless I use flash with the Canon. I suppose I'm neutral on this.
#5 I'm actually not sure what I want. I guess this is a use-to-see thing, as on the Canon it's pretty just one setting?
#6 I'm torn on this actually. The X100V is ideal I think in most other aspects but I'm not sure if I'd be happy with "just" the 35mm equivalent. I can make the case for an entirely smaller kit or just running with the R6 if I want some additional range.
