Beginner R7_sequence of camera management

New user to any interchangeable lens camera. Bird, wildlife, butterfly photographer.
I've have a combo of settings from community member, Distinctly Average, and YouTuber, Wild Alaska - to setup the R7 /RF100-400 lens. Using FV Mode - at this point only to change Exposure - thinking this mode will help me to transition to being able to change shutter speed and aperture when shooting.
I'm able to take photos - going slowly, a big learning curve for me to use the R7.
Not sure if I know enough to know how to forumulate the question right (hate that) - I'm interested in knowing how to physically, and sequentially manage the camera when I'm preparing to take the photo. If there an easier way, or is it just practice - never had a lens that you turned the barrel to focus.
Is this right or don't I know what I'm doing -
- See the subject - I turn the focus on the lens (big ring) until it comes close to focus and then use the next ring to fine tune.
- Next - I have the Star Button programed as 1-Point AF. Hit it and don't hold it down to obtain the focus on the subject if it's not moving. Then take my photo. Bird continues to stay still in the same place I can continue shooting as many photos as I want.
- Conversely if the bird is moving after I hit the Star button I hit the AF-On button that I have set as Animal Detect Auto Focus. I can see it getting on the birds eye (cool). Because its moving I hold down the AF-On (subject tracking ) button down through the sequence of shooting.
Question: Assuming I have to initially move the lens barrel ring(s) to begin focusing is there a proper way that makes moving them quicker and more fluid, i.e. hand on top of the barrel, or the bottom of the barrel? I seem to be very awkward moving the barrel - I've got the camera to my eye with one hand, the camera will move when I turn the barrel - kind of like walking and chewing gum I guess - I can't seem to easily do both. At times the camera is not at all steady as I'm readying to actually shoot.
I have some right arm weakness, arthritis and a plate in my elbow.
Yesterday, an eagle in nice light - car door open, feet in ground, steadying my left arm on the door post. Still I was fumbling with the lens barrel turning to initially focus while the camera moved from my eye a small amount. None of it is steady, smooth and fluid.
