Which to me does not sound like the optimal solution. I explained that I've only seen this begin to occur over the last few shoots - I've had the camera for over a year. Canon also advised that if I believe the R5 is malfunctioning, I can send it in for repair, which is certainly an option, but I am unable to depart with it while in the middle of a very busy shooting season.

Anyone else have any experience with type of issue?

I've not seen this with my R5, I have exposure simulation active all the time.  Are you on the latest firmware? - maybe worth a try if you're not yet on v1.7.
