I also have plans to visit Iceland this summer. Here are the combos I'm planning to bring.

R5 + RF14-35mm (for the landscapes. Based on Iceland landscape photos I examined, this focal range seems perfect.)

Except around Akureyri there is practically nothing that calls for wider than 24 mm lens.

the montains aren't high enough and the scenery is pretty flat in most places

It's different travelling as a tourist, because you're likely to visit places like the waterfalls which do benefit from ultrawide. Driving around, getting places - yes, my recollection (of the south west only) is that it was surprisingly flat.

There are few places in the north and east Iceland which benefit from an ultrawide but most location are better served with 24-XX lens.

Kirkjufell and Eystrahorn are best shot with UWA.

Yes, I do plan to visit Kirkjufell.

This will be my first time to Iceland, and I think my setups will cover many situations. Only disadvantage would be weight. On the other hand, I don't have to worry about changing lenses (yes, I'm in that camp.) Also, from a couple of previous bad experiences, I don't travel on vacation without at least two setups.

R7 + RF100-500mm (for the Puffins. This setup has worked very well with birding for me.)

And for whale watching.

Fuji X-E4 + XF18-135mm (for general purpose walk around)
