Some thoughts on your questions.  I do not have the 800 f 11 but I do have the 600 F 11 for my R7.  this gives 960mm equivalent  The 600 can yield very good sharpness in good light with good technique and the 800 should do the same.  However the 800 has a much farther close focusing distance and would be more susceptible to camera shake even with IS + IBIS.  You are probably going to be shooting off a bean bag or handheld.

When I was in Tanzania shooting wildlife I was then using a 500 F4 with and without teleconverter. This was fine for birds and large animals if they were not too close.  Often I needed to switch to a zoom lens for proper framing and composition when large animals were closer.

Another thought, Have you considered trading or selling your EF 100-400, which is an excellent lens, for the RF 100-500, which is just as sharp (confirmed by test sites) and focuses very close.  You would not have to fiddle with an adapter.  It takes the RF tele-converters with very little or no loss of resolution.  I sold my 500 F4 to get this lens and am very happy I did.            Good luck.
