It's pretty much what the manual says;
Hit the "+" looking button (not sure what's it's supposed to be called, it's the one under the * button)

hit the M-Fn button to bring up the AF zone options

select the flexible zone you want (1, 2 or 3)

hit the "+" button again then use the dials to adjust the horizontal and vertical size of the AF area

When I press the + button again it just scrolls through the different zones. Dials have no effect?

The following sequence works for me

1. press the button under the * button. Let's call this button ABC

2. press the M-Fn button

3. use dial to select the zone

4. press the ABC button

5. use dial to change the size of the zone

Try again

The manual says to press the magnifier button first. I had that mapped to something else so it wouldn’t work until I set it back to factory default.
I then mapped the MF-n to scroll through them
