One thing I notice a difference between the PowerShot line and the EOS M line is the lack of digital zoom on my EOS M3.

I was just wondering is this lack of digital zoom on all EOS M series?

Digital zoom seem to be the domain of bridge cameras and compact cameras only.

Even the Panasonic FZ300, TZ95, FZ2500 has digital zoom. The Canon G3X also has digital zoom.

I was just wondering do interchangeable lens cameras just don't come with "digital zoom"? (My experience ofcourse is limited to the EOS M3)

The old M2 could do digital zoom, but only for video.  At 3X zoom on that camera, it was doing a 1:1 pixel 1080p crop from the center of the image sensor.  Going beyond 3X introduced upscaling to 1080p.

As was mentioned above, the M6 II will do a 1.34X crop when using RAW burst mode, but the crop factor is fixed and non-adjustable.

Digital zoom is generally not available on interchangeable lens cameras because you can just use "analog" zoom and mount a longer lens.  Fixed lens cameras don't have that option.
