GPS data is points (coordinates) of where you have been.

Depending on the refresh rate, you'll get 4.5 days, if you use it 8 hours a day at a refresh rate of 1 second.
If you increase the time between position updates, you get longer operational time before the memory is full - up to 128 days.

The memory does indeed roll over. When its full, the oldest logs are forgotten.

You use Canon's GPS log file utility to access the logs. Pretty straightforward.
