The X100V has a customizable focal limiter which can be assigned to an Fn buttons and used similarly to snap focus.

Sort of. It’s a significantly inferior substitute. There are some minor issues (you can only have one setting,

Aren't there three AF Limiter settings?

the camera still seems to drive the AF motor, etc) but the main issue is that it largely doesn’t work in focus-priority mode, because if it doesn’t find something in the focus area that’s at the exact distance you’ve set, it doesn’t achieve focus and therefore won’t fire the shutter.

Why would you want focus-priority with a fixed focus distance; isn't the point of zone focusing not to require AF lock on a specific subject? Angle the camera down a bit and it's bound to acquire focus on the ground.

If you switch to release-priority mode then it essentially works, but now you’ve got two settings to change every time you want to switch between AF and fixed focus.

Does it work with AF+MF? Might be a lot quicker to physically move the AF toggle instead of using an Fn button to switch between Focus and Release priority.

Anyway… having tried it, it’s not a good enough replacement for proper fixed focus IMO. YMMV.

I'm not disputing your experience, and ideally real snap focus would be best for zone focusing.
