I believe the electronic shutter is lower bit (12?) files and therefore lower dynamic range — could be wrong

Yep it's probably due to Canon's ES still being limited to 12 bit read-out. It's common in all R bodies.

I believe the ES of the R3 is 14 bit

I believe the R3 is 13 bits in ES otherwise it should be similar to the mechanical graf but it isn't
