For many uses, the R's 30mp serves a purpose. If that purpose applies to you, it's a great 30mp sensor.
Other than that, the R6 is a much better camera in almost every respect. Yes I won't trade its image quality from what is perhaps one of the best sensors Canon ever made despite coming in at "only" 20mp.
Honestly, the difference in resolution from even something like the 45 megapixel R5 isn't particularly mind blowing if you compare studio scenes shot with both cameras. Outside of maybe worse moire performance from the R6 (which can easily be corrected for with software these days), you're not going to notice any difference until you punch in to 100% magnification; in probably 90% of applications you're never going to actually see any benefit from the higher megapixel sensors over 20 MP.
I feel like people somehow expect a 20 MP full frame sensor to be closer in quality to a 12 MP cellphone sensor than a 30 or 45 MP full frame sensor. As you said, the R6 is using one of the best sensors Canon has ever produced; it takes very nice photos and the autofocus makes it very easy to take way more keepers than any older Canon camera.
IME there is a meaningful difference in... clarity?.... as the megapixels climb. Especially with lower end to midrange glass. High res sensors + cheap lenses look better than low res sensors and amazing glass IME.
20MP isn't the end of the world, but for what the R6 costs I don't think it's reasonable to expect someone to compromise on such a basic and key spec. It should have been 30MP IMO.
I am still on the fence on this and thats the reason I still use my R even though I find it hard to tell the difference at 100% But then it seems to be a HUMAN has the tendency to like more what we knows better Unless its bright and shiny.
