R7 + EF 70-200mm F/2.8L IS Mk1 for soccer photography?

Considering upgrading from 7D Mk1 to R7. I am using an old EF 70-200mm F/2.8L IS Mk1 (2000) lens which will not be upgraded. This will be used exclusively for shooting outdoor soccer matches in good as well as challenging lighting conditions.
Will the AF on the R7 work well enough with an adapter and my old lens to make this a worthwhile upgrade?

I currently shoot soccer games with a Canon 7D (Mark 1, 2009) and an EF 70-200mm F/2.8L IS (Mark 1, 2000) lens.
I will go as high as ISO 4000 and as low as 1/1000s when the conditions are challenging. Images are passed through Topaz Denoise AI, which can smooth skin and faces a bit too much, but I'll pay that price to get the rest of the improvements to IQ.
I made the mistake of skipping 7D Mark 2, hoping that a Mark 3 would eventually appear, so I'm still shooting the old 7D Mark 1.
Both the camera and lens have ~150,000 shots on them. Still seem to be going strong - for now.
My major issue with the 7D is autofocus - no matter what the lighting conditions. Lots and lots of front- and back focus. I always manage to get a lot of keepers, but I also have to throw away shots I would have liked to keep. The relatively low shutter speed doesn't help either.
I am considering upgrading the 7D Mk1 to R7 and continue shooting with the old lens using the adapter. This is non-professional work and I am spending my own money on this (and not otherwise into photography as much as I used to be), so upgrading the lens as well is not an option.
I see a lot of reviews talking about wildlife photography and showing beautiful samples of birds, birds, and more birds, but hardly anyone demonstrating how it does with sports - in particular soccer, where two players are running towards you and constantly changing positions as they fight for the ball. The reviews will mention that it is great for sports and then go back to demonstrating how well it works for birds. There is one YouTube video where the R7 is used to shoot horse riders with terrible results, but throughout the whole video I got the impression that the photographer had no idea how to use the camera. I don't mind bird photography at all and I like to look at those images as much as anyone, but I would like to see other subjects getting more coverage as well
I guess my questions are:
- Will the AF on R7 work well enough with my old 70-200 F/2.8L IS lens? As in much better than my 7D Mk1 or a 7D Mk2 would? The 70-200 has a lot of shots on it already, so I'm wondering if wear and tear is partly responsible for the back/front focusing problems on my 7D and if I would simply have the same problems on a new body as well.
- I hear that the R7 is bad in terms of noise in low-light conditions, but everything is relative and like I said, I pass the images through Topaz Denoise AI. Is the per-pixel R7 noise levels better or at least as good as 7D Mk1/2, despite the much higher resolution? If so, then I think that would be enough for me, as the software would have more pixels to work with.
- Is the move from OVF to EVF too much of a jump (when you have to sit for two hours with your eye glued to it) or is it easy enough to get used to? Again, this is for soccer with constant panning and players moving towards- or away from me.
- I understand that the weather sealing is worse than that of the 7D, but I think that is OK. I used a 20D and a 40D before I got the 7D and I usually keep them out of the rain. I'll just keep the - now worthless - 7D body so I can use it when the weather is bad.
Anything else I need to consider before making the jump from 7D to R7?
