As a reformed professional pastry chef, I would say you chose wisely. I've been using my Kitchenaid KS55 for over 30 years without a hiccup (if I am recognizing correctly -- perhaps hers is a step up). I used them professionally as well. This is nothing complicated, but it definitely brings out the joy of baking.
