I like the colors I am getting from the EF 100mm L . A lot.

And can get those popping colors with it mounted on a M6II or even a M100 for that matter.

Am more concerned the speed booster could mess with those colors than it making a sharpness problem.

In general, the wider and/or brighter a lens, the worse it will behave on a speedbooster. The 100mm f/2.8 should be quite safe on a speedbooster. The 17-40mm f/4.0 L is an absolute trainwreck on a speedbooster.

The bigger issue with speedboosting the 100mm f/2.8 leaves you with a massive, nearly 800 gram 70mm f/2.0. The Sigma 56mm f/1.4, or an adapted Canon EF 85mm f/1.8 seem like much more sensible solutions. Especially when the you can pick up either of these lenses for less than the cost of a Metabones Speedbooster.

I love the colors that come out of my M6II with that lens on it.

Most of any lens I have mounted on a M6II. 56mm and 85mm included.

Did a car show with one. Colors crazy poppin !
