R7 + RF 70-200 F4L with continual AF seems like it would be the gear that trumps your setup
Nope. It would need to be the RF 70-200mm f/2.8, which would be a lot more expensive than my current kit. Like 2X more expensive. I also really dislike the ergonomics of shooting sports with a telescoping zoom.
my 70-300L is actually sharper than the XF 50-140 that I used to own and I am pretty sure that RF 70-200 f/4.0 is as good as it.
70-300L also works on my M6 so it is a win-win.
My experience has been the exact opposite as yours. My old original push-pull 100-400mm L was also sharper in the overlapping range than my 70-300mm L. My copy of the 70-300mm L was still noticeably sharper than the non-L and DO versions that I owned, but it just wasn't a standout, great lens. I have not tried the newest Mark II EF 70-300mm, but the Fuji 70-300mm is better than any of the older Canon versions while being dramatically smaller and half the weight of the adapted Canon L lens. The Fuji lens is basically the same size as the EF-S 55-250mm STM on the adapter.
It is possible whatever differences you are seeing are due to you using the 50-140mm f/2.8 on the 2014 era X-T1 with only 16MP versus the 2019 era M6 II with 32MP.
Regardless of any differences in lens sharpness, I am not sure how a 70-300mm f/4.0-5.6 or 70-200mm f/4.0 are supposed to be substitutes for a 50-140mm f/2.8. The 70-300mm L is also sharper than every EF-M zoom, can it replace all of them too?
