Got my EOS R6 Mark II: now what?

Hello - excited to get my EOS R6 M2. Excited is not cutting it, really excited.

But can't seem to make it work the way I'm used to! It's like space age stuff as I am replacing EOS 5D Classic.

My repertoire - street photography. Thus, I would like to

- focus fast, focus quickly as I have encountered a fleeting moment gone in a second. [In 5D I used AI Servo mode]

- I've always resorted to center point only and then moved to ensure subject's eyes are in focus (in most cases, i.e.).[In 5D - that's how I did it]

- Issue I had with 5D was grainy photos in low light. I'd like to now be able to expose more to the right but within limits.

- DoF - I am hoping to have better control and capabilities something I missed having too much control in 5D.

Here comes my confusion. There's also this small horizontal wheel on top. And then the lens itself (RF 24 to 105) has a control. Finally there's this small red dot button on top and the joystick on the back.

I am used to press the focus selection button twice to force camera to center point and/or one press and then the joystick to select some other. Now when trying a series of random blocks are selected and it has confused me.

The back wheel I've decided to retain for exposure control, like I did in 5D. Then the top vertical wheel just before shutter release I'd also retain as-is to control shutter speed as I primarily shoot Tv.

I would prefer to use the lens control ring for ISO increase/decrease? But can't the camera itself select a good ISO depending on everything else and if and only if I really want to - use the control ring to further tweak?

How best to use that horizontal wheel on top and that M-Fn button (red dot)? Any advice?
