I have seen this problem too with the old version and my R5, and don't have a definite solution. The one thing I have tried is using a GPS or Navigation app to keep the phone constantly updating the GPS position. I'm not sure if the problem is that the Canon app doesn't query the GPS too often to save battery, or if it doesn't communicate it frequently enough to the camera.

I just did some testing of this with my R7 (v1.2.0) and the latest version of Camera Connect (w/GPS access set to always) on my Samsung S21 Ultra (Android 13, One UI v5.0). I drove the camera around in the car using the R7 built-in interval timer to trigger the shutter every 1 sec (MF & Tv to avoid delay). I imported the files into LrC and looked at the map zoomed all the way in.

With just the Camera Connect app running, the EXIF GPS position updated about every 10s, i.e. sequential photos were typically shown on the map in groups of about 10, all with the exact same GPS coordinates in the metadata window. If I ran Google Maps in navigation mode on the phone (or another app called GPS Status, which pings the GPS every second) the EXIF GPS position updated every 4-5s, i.e. the photos were typically in groups of 4-5.

It did not seem to matter how fast I drove, so the Camera Connect app is not looking at how far you move before updating the camera. It seems that the Camera Connect app only pings the GPS every 10s (possibly to save battery); but if another app pings the GPS more frequently, the app will send new coordinates to the camera more frequently.
