My guess is that because the adapter has electrical contacts, the camera thinks there is an AF lens attached, since electrical contact is still being made with the adapter. The "Shoot Without Lens" and manual focal length settings in the menu only apply if a manual lens, or any adapter, without any electrical contacts is mounted on the camera. It would probably work properly if you used a dumb (contactless) adapter for the lens, or if you could cover the contacts on the adapter itself.
