So I received the whole set up finally today.

This was mainly a test to see how well such a set up will work, especially the lens being a "non-efm" native lens. And yes there is some difference that are very noticeable, but overall the whole set up works very well. I'm happy to say it works well and I'm now more comfortable spending more for EF or EFS lenses in the future (for example the ef-s 55-250mm stm, ef 70-300mm do lens, tamron 100-400mm, just as an example).

I'm still on the cameras original firmware, meaning I haven't updated it to latest yet, and impressively the viltrox works super well and is tightly sealed.

One thing with the EF 50mm STM lens is you need to turn off continuous AF, else the lens will keep protruding in and out every second (focus hunting), there's also a loud motor sound that can be heard when this action is taking place.

That's the second thing I turn off with every Canon mirrorless camera I get. The first thing I turn off is the beeps.

With ef-m lenses was never an issue, very noticeable with EF lenses though on M3

It's only not an issue because you can't hear them focussing.

This is where efm lenses really outperform, you don't only hear no noise but you also don't have any protruding lens in and out (focus hunting).

If you own it, take another look at your EF-M 22mm f/2.0.  That lens definitely moves in and out when focusing.  The weird thing, it will even move in and out when mounting the lens, even if your camera is turned off.  It is also quite audible.
