I think that might be a good idea. I am following a photographer from the Netherlands on Flickr who seems to travel through the world with just one lens on her camera (XF 23mm, f2) and she gets really amazing results. Have a look: https://www.flickr.com/photos/maudebardet/

23mm f2 is the best lens for street, especially with it being hot and humid there. Ideal for Hanoi streets and the others. Easy to carry around all day in the heat.

For scenery and Angkor Wat take the zoom. You definitely want 16mm in Angkor Wat and 80mm could be good to zoom in to details there and at Halong Bay. 16mm is good for markets too e.g Chinatown in Bangkok.
