I think in the scenario you are laying out, the R7 is the better bet for you, except maybe at very high ISOs.

Even at high ISOs the difference is going to be extremely minimal because the R6 is forced to use a higher ISO due to the TC robbing a stop of light. And for that you trade reach and resolution.

It's like taking 1 step forward (sensor) and 3 steps back (reach, resolution, aperture)

This is easy enough to demonstrate with DPR's Studio Comparison Tool; the scale of the subject matter is unfortunately different, but if you just look at the pixel-level noise ("Full" mode) when the R7 is at ISO 25.6K, the R5 is at 51.2K, and the R6 is at 102K, that would be what you get with TCs to equalize pixels-on subject. The R6 and R7 are like identical twins, and the R5 is a bit noisier. Now this comparison is actually biased towards the FF sensors, because the R7 gets more diffraction from the chosen f-ratio, which wouldn't happen with the TCs, and the TCs would add some small aberration themselves, so the R7's ability to cut through the noise with detail is actually under-represented by the comparison.

Here's an example: DPR Studio Comparison Tool
