I've only had my X-H2s for a few days, but this isn't true of that camera, and from the manual, it looks like the X-T5 is the same. You can't change the metering mode, or "photometry," but you can certainly use exposure compensation.

That said, I am not seeing this behavior at all in my X-H2s. I actually got a lot of under exposure with bird mode. All of my test shots had the sun over my right shoulder to somewhat behind me though. For the OP, are you shooting towards the sun? I could see that as an issue with small subjects if you can't spot meter.
