It’s not something I use much but I think the only way the aperture will change according to the zoom focal length on a constant aperture zoom lens (which is what the Tamron is) is if you’re using shutter priority and a fixed ISO value. I can’t think of any other settings that would do it. I don’t have an A7R, but I doubt if it’s much different to other Sony’s I have or have used.

The 70-300 will change because it’s a maximum of f4 at its widest (70) and f5.6 at its narrowest (300). (So if you zoom out beyond about 100(ish?) mm the max aperture available will be f5.6 and the indication will change accordingly.
