That's what I thought at first but on R6 it looks like the preview is independent of shooting. If you're in low light and check "suppress lower frame rate" the "captured image" previews look like a blurred mess at a lower shutter speed although the final images are clearer.
The example here seems to show a pre-production R5 with electronic shutter being used and still maintaining at least 30fps on live view (probably more since the video upload is capped at 30fps). Unless I'm missing something this seems to be removed in the final release.
