A few time lapses I made inside: How to get better at them?

I am curious what people are doing to make time lapse videos? What in camera method and if there is any additional hardware that would make them better?

These were all relatively simple in just setting the camera to aperture mode and a set interval. That said it does lead to exposure times changing which I didn't mind on the few I did. But what if I want 30 second exposures from dark to light transitions, things like that (is setting the ISO to auto and Shutter priority the only way?).

My method is take the batch of CR3 files and put them into LR and do some batch processing to output the JPG's. I then open Photoshop and import one image clicking on sequence, then render the video with photoshop. I add music with iMovie on my
