R7 Shutter options - when to use what?

I was a little disappointed to find out the downfalls of the various shutter options having only had to worry about how loud it might or might not be on a DSLR!

SO could we list examples of pros and cons of various shutter options and examples of when they could be good as well as the negative. As a mainly wildlife shooter I feel tied into first curtain electronic (which I will call FCE) at the beginning of my journey with the R7.

So far I am thinking the rolling shutter will not be too much of a problem with FCE at the lower H fps even with birds in flight? Mechanical is loud and has shutter shock? Does this include fast shutter speeds? Is ES only always ok for fairly static birds say in a hide?

It does seem to defeat the object a bit having the fastest fps not suitable for fast moving objects!
