True. My other idea was to just get a new motherboard, CPU, and RAM, with a good IGPU, but the only thing I need is better video. I was hoping to wait a couple more years before replacing everything.

I do have a USB 3.0 video adapter that does 1440P, but those are not ideal, and it gets rather warm.

While Nick is right, the problem with the iGPU is that it's limited to whichever outputs the motherboard offers... which more often than not means One Output. So even if you're set on using the integrated chip, you'll be looking for a graphics card to actually connect the 3 monitors you'll be using. Since you don't seem to require any actual performance from this card, just get whatever you can find that is fairly recent and has the ports you require.
