It is experimentation for each focal length, diafragm and and starting focus.

Do a few focusstackings with too small a number of frames, and you will see bands of sharper/unsharper with distance.

If you have no time to experiment, take a lot, the aligning/stacking program finds out what to use. Overdoing it costs only (a lot of) computertime. The camera does the stacking at something like 10-20 shots/sec (I have got a Z (I) the II may be faster).
