high speed sync verse flash duration

I'll explain a bit further....

I really don't consider myself a novice at photography, and yet, I find the learning to be endless.

I'm currently learning about flash duration, as I would like to buy my first monolight.  And, experiment with freezing action.  (Such as, a dancer jumping,  or fruit dropping into water).

So, here is my question, (thoughts).  Would it be better to just use a high shutter speed to freeze aciton,, (high speed sync would therefore be required).

Or, is it better to use those lower shutter speeds, (such as 1/200) ,, knock out the ambient light, and have a strong enough strobe with the right flash duration (such as 1/6000)??

Is one better than the other, or used more often (for stopping the actions)??

Either way, I still want to get a good strobe,,, but I'm always learning and always have questions.
