I know the autofocus and general shooting speed is pretty much the same between the two cameras, I'm just on the fence between the extra MP and features of the R7 vs the quality and shooting experience using a native RF lens via the adapted lens

I have the R5 and not the R7, but I hope this might be helpful anyway.
As an experiment, I attached two stacked third party teleconverters to my "EF-S55-250mm f/4-5.6 IS" which is an older design and not as good as yours. This was handheld, auto focused and wide open. The old lens works better on a new body than it did on my EOS Rebel T1i. The image was processed with Canon DPP software and "digital lens optimizer" was applied. Actual focal length was 700mm but camera reported 500mm.
While the R7 has higher resolution, I expect that the old lens will work as well as it ever did.
